Never use he/she. You may turn the singular pronoun into the plural (they) and change the verb agreement accordingly if that maintains the integrity of the paragraph. Better yet, rewrite the sentence.

Use: The class will meet today.
Instead of: Each student must hand in his homework on Thursday.
Use: Each student must hand in the assigned homework on Thursday.
